Gingerbread Pancakes - Pancakes pain d'épices


This morning I made gingerbread pancakes. Here is my recipe:

Ce matin, j'ai fait des pancakes pain d'épices. Voici ma recette (français suivra):

1 1/4 cups kamut flour

1 1/4 cups wheat flour

4 teaspoons baking powder

1 teaspoon salt

2 teaspoons cinnamon

1 teaspoon ground ginger

1 teaspoon nutmeg

1/4 teaspoon ground cloves

3-4 tablespoons molasses (I use organic blackstrap)

2 tablespoons maple syrup

4 tablespoons canola oil

2 teaspoons vanilla extract

2 1/2 cups almond, rice or soy milk with 2 teaspoons apple cider vinegar mixed in

water as needed to thin the batter

Mix the dry ingredients. Add the liquid ingredients and whisk together. Add water as needed to thin the batter. I cook my pancakes in my cast iron pan with a little canola oil. Serve warm with butter or margarine (we use Earth Balance) maple syrup and applesauce. Makes 6 to 8 servings.

1 1/4 tasses de farine de kamut

1 1/4 tasses de farine de blé

4 c. à thé de poudre à pâte (poudre à lever)

1 c. à thé de sel

2 c. à thé de cannelle

1 c. à thé de gingembre moulu

1 c. à thé de muscade

1/4 de c. à thé de clou de girofle moulu

3-4 c. à soupe de de mélasse (j'utilise la mélasse verte bio)

2 c. à soupe de sirop d'érable

4 c. à soupe d'huile canola

2 c. à thé d'extrait de vanille

2 1/2 tasses de lait d'amandes, de riz ou de soya, mélangé avec 2 c. à thé de vinaigre de cidre 

de l'eau au besoin pour la pâte

Mélanger les ingrédients secs. Incorporer les ingrédients liquides. Mélanger au fouet en ajoutant un peu d'eau jusqu'à obtenir la consistance désirée. J'aime faire cuire les pancakes dans ma poêle en fonte avec un peu d'huile canola. Servir chaud avec du beurre ou de la margarine, du sirop d'érable et de la compote de pommes. Cette recette donne environ 6 à 8 portions.

  2. These sound delicious, I'm going to get up early in the morning to make them for my hubby's breakfast (he's working tomorrow, just like he did on christmas day - no rest for ski instructors during the holidays!)

    1. I hope you like the pancakes and I'm so glad your Dad is enjoying Farley Mowat books. Your boys might enjoy some of them too. My Lucie (10) loved Owls in the Family and I plan on reading some others with her this winter… Lost in the barrens perhaps...
